In real life the saddle horn is used to dally your rope. Basically to loosely tie your rope to after you’ve roped something. Cows for example are immensely strong and a human on horse is no match. However tying off to the saddle horns means now the horse is pulling the cow. In Red Dead the saddle horns serve no purpose though.

So with the +2 to speed and acceleration the trapper saddles all give you the stats from the best stirrups.
